Baked Stuffed Peach
Day-old Vie de France Cookies (any flavor)
Take leftover cookies and break into chunks. Place on sheet paper-lined tray and bake at 200°F for 1 hour.
Let cookies cool and crush to make pieces.
Using a partially ripened peach (or your choice of fruit: apple, pear), cut in half and remove pit. Using a tablespoon, scoop to clean out center and slightly enlarge hole.
Fill peach hollow with heaping spoonful of cookie crumbs.
Top with dollop of soft butter (1/2 tsp).
Bake in preheated oven at 375°F for 28-32 minutes.
Let cool and top with crème fraiche or whipped cream.
