Granola just got more interesting! Use in Parfaits, with Yogurts, or on its own!!
6-8 VDFY Cookies (any flavor will do!), baked and cut into ¼ inch cubes, makes 4-5 cups
2 cups sliced, raw almonds, or other nuts
1 cups unsweetened coconut chips or flakes
1 cup raw sunflower seeds, or other seeds
Optional – ½ cup of dried fruit (raisins, cranberries)
1/2 cup organic, unrefined coconut oil
1/2 cup honey
1 tbsp. Vanilla Paste, or Vanilla extract
Preheat Oven to 300°
In a large bowl, combine Cookie pieces, all nuts, seeds and dried fruit, if using.
In a small saucepan, combine coconut oil and honey with the vanilla. Heat just to boil and remove from heat, pour this over the dry ingredients, mixing well.
Spread the granola mixture on baking sheets (probably two sheets) lined with parchment paper.
Bake for 25 – 30 minutes. Granola should be nice and brown. Allow to cool before breaking it up, leaving some nice big chunks. Let dry before packing in storage jars or air-tight containers.
